You taste the sweet roasted garlic with little chewy bits, I can’t see myself not doing it that way anymore, it adds so much flavour.
That sounds great milanja, i often will roast cherry tomatoes in the oven if i am cooking salmon but have never thought about mashing them up for a risotto, i sometimes make an arabiata sauce for a risotto and stir it through the risotto later but i just use tinned tomato , might try the fresh oven roasted ones next time i do an arabiata sauce

    • Mexican style bean soup, just throwing in bits and pieces and winging it.

      • Pork and Beef Tacos.

There's just me and the missus and i still cook enough food for an army. It's a habit I can't break.! We always had family calling in for dinner when we lived in Sydney. There are no impromptu visits down the south coast. Left overs for lunch is always nice though.

Thanks mickie, I only did it because the wife’s friend pulled out and she didn’t want to go alone. My hammys and calves are cactus right now

Nice. Did a Greek version recently. Marinated the chicken in Greek yoghurt then baked with lemon, potatoes and red onions. Unreal.
