        Did you keep the bream ? I really like a nice whole bream around the 28 cm- 30 cm mark, flesh is so tasty, i find a bream that size is much better eating than a small snapper around the same size ( yes i know the minimum snapper size is 30 cm ), i find the larger snapper better eating.than the just legal size ones. Hope to get a couple of bream while i'm away but i wont say no to a flathead or whiting either, have seen a couple of mangrove jack caught on that arm of the river also years back. The good thing, i will have the river right out the front to fish or there is a nice protected corner spot at the nearby surf beach i can fish while the better half sun bakes.

          Final tally was 5 Bream and 1 Flatty.

          I do like to eat my Bream whole. Flour then shallow fry until golden brown. Squeeze of lemon.

          I sometimes fry garlic, chilli and spring onion in peanut oil then pour it over the cooked fish. Garnish with spring onion, squeeze of lime.

            The bigger Bream can be a little bitter. imo the best way to cook them if you're doing them whole is on the BBQ and in a fish grill basket. Key is to hold the basket vertically numerous times while cooking to allow the bitterness to drain.

            If you're going to QLD take a throw net as there are plenty of prawns to be had this season and in the daytime.

              Yeah i like the bream from just around legal size to 30 cm, they are at their tastiest there and like you said, whole, floured and shallow fried although i do them sometimes in a baking dish with a bit of wine in the oven. I used to catch a few small red bream in the harbour around 26-28 cm, that was when the legal size was either 27 or 28 cm at the time, i kept them and floured and shallow fried but thought they tasted a bit ordinary compared to bream at the same size.

              Not going to QLD, only be around Grassy Head / Stuarts Point, just on the northern side of the Macleay River from South West Rocks, not taking the yabby pump but should be able to access some fresh prawns, if i go to beach i hope to get some pippies to use for bait there or might see if i haven't forgotten how to catch a few beach worms.

                Small snapper??

                We'd do this drift on a NE wind just before dark. We'd line up with the Rose Bay Sea Planes office and Hermitage Reserve. We'd get 2 to 3 every drift around the 35 cm mark. They'd eventually go off once it was dark. The other reliable spot for them was just inside North Head at day break. We only had a 12 ft tinnie at that stage and would leave it on the foreshore behind Rose Bay Police Station. Getting our drivers licence and a bigger boat was the game changer for chasing Snapper.

                    At Kirribilli i would catch a few around the 28-29 cm mark which were legal back then, did pick up nice one on the hamdline fishing at the back of the wharf and it was a 36 cm specimen but that was a once off.
