Typically this involved large amounts of men wearing short shorts (plus GayFL jerseys) standing outside, occasionally traversing Oxford St diagonally to visit the Albury. I'd go past the Manacle, Banana Bar, Midnight Shift...etc at 8am on Sundays (when taking my grandma out for coffee) and there'd be amped up guys lined up for entry who were just getting started (having been awake since Friday night).
Around the same era, the building across the road had an upstairs bar called the Grand Pacific Blueroom. I used to get on the decks there occasionally as part of a night called 'Speakeasy'. Took a girl named Jessica (from Lidcombe) there for our first date. It became a bit of a ritual for us to do Korean BBQ in Lidcombe (where I'd pick her up), hit up the Blue Room for some slow dancing and then drive to Lidcombe by her parents' curfew. Simpler days...

As for beer I don't really go too hard in to the craft brewing, all that scented apricot and sour beer crap is shit to me. Is Hawke's Brewing a craft beer? I like their stuff. Young Henry's are associated with Souths so I avoid, I got in a fight with a bartender at batch so fark them, I really like Grifter and the stuff from sauce.
The last time I went to the beer, food and footy festival there was a Glebe Dirty Reds brewery stand that had just started up if I recall, not sure if they ever got full steam ahead but that would've been great if they did, I had the Frank Burge iirc.
