    I've just received Sally's and Keno Jaxxx nomination for their favourite Chicken dish. I feel honoured to be able to announce the following as they're unable to be here.

    Keno Jaxxx - The 1am Chicken Kebab at his favourite Merrylands bus shelter. BBQ sauce thanks.

    Sally - Chicken Kiev. That classic Russian dish!

          I’m quite partial to a lovely Korean boneless fried chicken with snow cheese.

          Never been to Russia so other than Woollies, my Kiev experience is quite limited.

              Oh Renty..I have never heard of that before but sounds delicious.

              I have Belle's around the corner from me but can't eat it but can make a gluten free version modifying one of Donna Hay's recipes using buttermilk.

              I have been getting a plain roast chicken from Field to Fork as they use an onion for stuffing as opposed to bread crumbs. I get so many meals out of it and have been making stir fries with almond and all different coloured capsicum which I can seem to tolerate again these days. There are also some other great chicken shops up on Bondi Road and I like the one at the junction in the mall.

                Years ago I went to a restaurant in the Newcastle dining precinct and I remember having a great chicken and mango salad. I’ve since made variations of it over the years and you can modify the ingredients to suit your own personal tastes.


                Chopped roast chicken

                Chopped fresh mango

                Snow pea sprouts or baby spinach

                Chopped macadamia nuts

                Dried cranberries

                Chevrette goats cheese chopped into tiny pieces. Brie or camembert would work also.

                Fresh lime juice to squeeze over the top.

                Just toss it all together.
